I would say that you are about 1500 calories, but you need more fruit & vegetables in your diet. (The cashews, second egg cell and alfredo sauce & mozzarella food are questionable choices)
Your diet would be more complete with some material (intact grain bread) and dairy products (milk). I would cut back to about 2000 calories per day to begin because you may mortal a hard time staying on track with such as a drastic change. Also, all for an easy way to keep track of your diet,
